Sticky Toffee Pudding is a classic British dessert made famous by Pubs. This rich and comforting dessert is a favorite for many, with its sticky, sweet and indulgent flavors. If you are ever eating Pub Food in London, definitely leave room for this dessert.

We ordered Sticky Toffee Pudding at Gordon Ramsay’s Street Burger Restaurant on our recent trip to London. We were instantly hooked. The first thing I did when we got back home, was lookup a recipe to make this myself. After some research I found the perfect recipe to Sticky Toffee Pudding and let me tell you: it was soooooooo good! I didn’t plan on sharing recipes on our blog at first. But after making this cake, I just needed to share my happiness and my new addiction with all of you.

One of the reasons why Sticky Toffee Pudding is so special is its rich flavor. The dessert consists of a moist sponge cake that is made with dates and topped with a sticky toffee sauce. The combination of the warm cake and the sweet sauce is simply divine.

What is the origin of the Sticky Toffee Pudding?

The origins of Sticky Toffee Pudding are a bit unclear, with some suggesting that it dates back to the 19th century. However, it wasn’t until the 1960s that it became a popular dessert in Great Britain. Its popularity continued to grow throughout the 1970s and 1980s, and it is now considered a classic British dessert.

Ingredients for the best Sticky Toffee Pudding

For the Toffee Sauce you need:

  • 200g [1 cup] dark brown sugar
  • 150ml [0.6 cup] (double) cream (unwhipped)
  • 100g [0.4 cup] unsalted butter
  • 1 tsp vanilla extract

For the cake you need:

  • 200g [1 cup] dates (no pitts)
  • 200ml [1 cup] boiling water
  • 1 tsp baking soda
  • 75g [0.3 cup ]unsalted butter
  • 100g [ 0.4 cup] dark brown sugar
  • 2 eggs
  • 180g [0.8 cup] plain flour
  • 1,5 tsp baking powder
  • 1 tsp vanilla extract
  • a pinch of salt

Instructions on how to bake the perfect Sticky Toffee Pudding

  • Preheat your oven to 180C / 160C Fan. [356 F / gas mark 4]
  • Grease and line a 20cm square cake tin.
  • Put the dates in a bowl and pour over the boiling water and baking soda. Leave to soak for 20 minutes.
  • Cream together the butter and sugar until light and fluffy.
  • Add the eggs one at a time, beating well after each addition.
  • Add in the flour and vanilla extract.
  • Add the soaked dates and any remaining liquid to the mixture and stir well.
  • Pour the mixture into the prepared tin and bake for 35-40 minutes, or until a skewer inserted into the center of the cake comes out clean.

While the Cake is baking in the oven, make the toffee sauce.

  • Place the sugar, cream, and butter in a saucepan over a low heat.
  • Stir until the sugar has dissolved and the butter has melted.
  • Increase the heat and bring the sauce to a boil, stirring constantly.
  • Reduce the heat and simmer for 2-3 minutes, or until the sauce has thickened.

Once the cake is done, remove it from the oven and leave it to cool for a few minutes.
Cut the cake into squares and pour over the warm toffee sauce. Serve with a dollop of whipped cream or vanilla ice cream. The cake and the sauce both need to be warm when served.

TOP TIP: If you want to bake the cake a day before serving it, the best way to heat it up is in the microwave. First cut it into pieces, then heat them up. This gives the cake an even more moist feeling.
